Chicken Lettuce Wraps

This is a quick and easy recipe that can be made in big batches and served as an appetizer or main course. Your kids will love it because they can help you make it and they get to eat it with their hands, just like at the restaurant! Also, by substituting chicken for beef you save over 70 calories and 7.5 grams of fat per serving.

Ingredients

    Serves 4
  • 1 lb ground chicken breast
  • 2 tbsp canola oil
  • 4 scallions, chopped
  • 2 oz water chestnuts, chopped
  • ΒΌ cup low sodium soy sauce
  • 4 tbsp teriyaki or hoison sauce
  • Pepper and ground ginger, to taste
  • Iceberg lettuce

Instructions

1. Heat 2 tbsp canola oil in a non stick pan.
2. Add ground chicken and mix it until fully cooked, about 10-15 minutes. Season with pepper and ginger, to taste.
3. Add scallions, water chestnuts, and soy sauce. Mix well.
4. Serve on iceberg lettuce wraps and dip in teriyaki/hoison sauce (or drizzle 1 tbsp of sauce on each lettuce wrap).
