Israeli Salad with Mango or Pomegranate

1. Combine all the salad ingredients together in a bowl and pour dressing on top.

Ingredients

  • 4 cucumbers, peeled, and cubed (chopped into small squares)
  • 3 tomatoes, cubed (chopped into small squares)
  • 1 onion, cubed (chopped into small squares)
    * Optional: 1 red/yellow pepper cubed (chopped into small squares)
  • Top with pomegranate seeds or cubed mango
  • Optional: Sprinkle fresh basil or mint on top

    Dressing:

  • Fresh lemon-juice of 1-2 lemons (or lime)
  • 1 tbsp olive oil
  • Salt, pepper, garlic powder, cumin
