Almond Coated Honey Mustard Chicken

Ingredients

    Serves 4
  • 4 4oz chicken breast fillets
  • ½ cup orange juice
  • 3 tbsp Dijon mustard
  • 1 ½ tbsp honey
  • ¼ cup water
  • 1/3 cup almond accents (or slivered almonds)
  • ½ tsp paprika
  • Salt and pepper, to taste

Instructions

1. Preheat oven to 350° F.
2. Place chicken in a Pyrex.
3. In a bowl, combine all ingredients (besides for almonds) and whisk together.
4. Pour sauce over chicken.
5. Sprinkle almonds over chicken. Add more paprika for extra color.
6. Bake covered for 20 minutes, then uncover for last 10-15 minutes.
